Clam Chowder

The whole thing in one paragraph

Render chopped raw bacon in the pot, soften onion and celery in the fat, sprinkle flour over it and stir a minute to kill the raw taste. Add clam juice + water + potatoes + thyme + bay, simmer until potatoes are tender (~15 min). Chop your clam meat, add it with the cream and half the cooked bacon, warm 5 minutes — never boil. Salt, pepper, done. Top bowls with the rest of the cooked bacon. Chowder is better after 20 minutes off heat. Don't rush the cream step.

The base

  • Clam meat 1.5 lb, defrosted — you have it. If pieces are big, rough-chop to bite sizeKEY

  • Cooked bacon 0.5 lb — half goes IN the pot, half on top of bowls
  • Butter 2 tbsp

Vegetables

  • Yukon gold potatoes 2 lb (about 5 medium / ~6 cups diced ½"). Creamy, holds shape — right choice
  • Onion 1 large, diced (~1.5 cups)
  • Celery 3 ribs, diced
  • Carrot 1, diced — optional, some purists skipOPT

Liquids & seasoning

  • Clam juice 3 cups (24 oz of bottles). You have it — this is your brothKEY
  • Water 1–2 cups, to barely cover potatoes
  • Heavy cream 1 cupKEY
  • Half-and-half or whole milk 1–2 cups (2 cups = thicker)
  • All-purpose flour ¼ cup (the thickener)KEY
  • Thyme ½ tsp dried (or 3 sprigs fresh)
  • Bay leaf 1
  • Black pepper + salt pepper heavy (½ tsp+), salt LAST — clams + clam juice are salty

  1. Prep everything first
    Dice bacon, onion, celery, carrot. Scrub potatoes — peel if you want, or don't (Yukon skin is fine). Dice potatoes ½". Rough-chop the clam meat if pieces are big. Open clam juice.
    Chop clams now, not later — once the cream is in you don't want a cutting board of raw clam cross-contamination.
  2. Render the raw bacon
    Big pot (5–6 qt) or Dutch oven, medium heat. Chopped raw bacon in, cook 8–10 min until crisp. Remove bacon with a slotted spoon, keep the fat in the pot.
  3. Soften the veg in bacon fat
    Add butter to the fat. Onion + celery (+ carrot), medium heat, 6–8 min until soft and translucent, not browned. Stir occasionally.
  4. Make the roux
    Sprinkle the ¼ cup flour over the veg. Stir constantly 1–2 minutes — it should look like wet sand and smell toasty, not raw.
    Under-cooked flour = paste-tasting chowder. One full minute minimum, medium heat, keep stirring.
  5. Build the broth
    Pour in clam juice slowly, scraping the bottom. Add water 1–2 cups, potatoes, thyme, bay leaf, and the RENDERED bacon back in. Bring to a boil, then drop to a simmer.
    Add liquid in stages while stirring so the roux doesn't clump. First cup slowly, once it's smooth the rest can go in.
  6. Simmer until potatoes are done
    Uncovered or lid-ajar, 12–15 min. Fork should slide into a potato piece with zero resistance. If it doesn't, go 3 more minutes and test again. Fish out the bay leaf.
  7. Clams + cream in — gently
    Heat to low. Add clam meat, cream, half-and-half, and half the cooked bacon (crumbled). Stir 3–5 min just until hot and clams are firm-opaque.
    NEVER boil after the cream goes in — it splits and the clamps turn to rubber. Low and slow. Clams are already cooked-ish; they only need to warm through.
  8. Season and rest
    Black pepper now. Taste, then salt carefully — clam juice is already salty. Kill the heat, lid on, rest 15–20 min so it thickens and the flavors settle.
  9. Serve
    Ladle into bowls, pile reserved cooked bacon on top, crackers on the side. If it's thicker than you like, stir in a splash of milk.

Adjust it

🥓 Bacon loadYou have both raw + cooked. Raw = flavor base. Cooked = garnish + half in-pot. If short on raw, use 3 strips + 1 extra tbsp butter.
🥔 ThickerMash a few potato pieces against the pot wall right before serving. Or let it sit overnight — next-day chowder is the thickest.
🥛 LighterSwap the cream for all half-and-half. Still good, less rich.
🌊 More clam-forwardSwap the 1–2 cups water for a 3rd bottle of clam juice, or save ½ cup clam juice and stir it in at the END (fresh clam flavor survives less cooking).
